Program objectives
This program trains individuals to become seafood products processing technicians. Work environments are varied and include seafood products processing plants (fish, mollusks, crustaceans, echinoderms and seaweed), government departments, research centres, food and water analysis laboratories, shellfish depuration facilities and consulting firms.
Seafood products processing technicians are called upon to manage production and quality management activities in seafood products processing plants. They supervise staff and oversee operations related to the sanitation and maintenance of equipment, tools and materials. They oversee product processing and coordinate the activities of workers. They also personally handle certain product processing operations. They apply quality control standards that apply to seafood processing as well as food safety regulations. They also help develop new products and processes, and help support seafood product marketing. Lastly, they carry out organoleptic, physicochemical and bacteriological analyses for quality control and verification purposes.
